Sourdough Soft Pretzel Recipe - Submitted by @Cherrycuddler

Dough

200g milk (take it out of the fridge about 30min before you need it to take the chill off)

250g sourdough starter

2 tsp instant yeast

1 tbsp soft butter

1 tbsp sugar

400g Millers Pride AP flour

1 1/2 tsp salt


Egg wash (egg yolk with a splash of milk)


Baking soda bath

1/4 cup baking soda

5 cups water


Finishing touches

Flakey salt or coarse salt

Melted butter


Directions:

Into a mixer with a dough hook, Mix all dough ingredients together (starting at the top) slowly mixing in flour 1 cup at a time

Knead for 8min until smooth dough has formed and it pulls away from the sides

Cover and let it rise for 45 minutes to an hour until doubled in size

Put water boiling (DO NOT PUT THE BAKING SODA IN YET)

Preheat oven 425

Dump out onto a floured surface and cut into 2 1/2 to 3 ounce doughballs. Roll into long ropes and shape pretzels ( alternately you can take the long rope and wrap it around a hotdog in a spiral motion)

Put shaped pretzels onto a baking tray line with parchment paper and sprinkled with flour. Once all the pretzels are shaped (your water should be boiling) slowly pour in your baking soda and boil each pretzel for 30 seconds removing with a slotted spoon and putting back on the baking sheet. Brush with egg wash sprinkle with salt and bake in a 425° oven for 12 to 15 minutes

Remove from oven, brush with melted butter

Sprinkle with additional salt or with cinnamon sugar
